Baked Custard

How long can you use spices? Do they ever expire?

My grandfather was making a baked custard the other day, and I commented on how the tin of nutmeg that he was using looked really old-fashioned, as obviously it was a tin, not the modern little bottles that you find. He told me that he’s had it since 1987! The custard tasted fine, though, so does spice ever go off?

Spices will not go bad it will loose its fragrance. I have my spices in the cabinet sitting there for ages. But if I need to use it, just toss and roast in a pan in low heat to extract the oil and fragrance back to life.
