Baked Pineapple Recipe
Can someone help explain to me chemical reactions when doing a baked pineapple recipe?
½ cup butter
1 cup sugar (I use 2/3 cup)
4 eggs, well beaten
1 can crushed pineapple, drained
5 slices white bread (I use whole grain white)
Beat butter and sugar until fluffy. Add eggs and Pineapple and mix well. Add torn up bread pieces and mix. Place in a 2-quart casserole and bake at 350˚ for one hour until top is slightly brown.
I need to know what is going on when baking this in terms of chemistry. For example, what chemical reactions are happening when the different ingredients interact with each other or just what happens to them chemically as they are baking.

this is a bread pudding (custard) with pineapple in it to give it a different flavor. the butter, sugar, eggs congeal to make the custard.
I don’t know or care about the “chemical reactions” I just care that the recipe sounds delish!! and would be very easy to make.
