Does anyone have a GREAT, UNIQUE recipe for banana bread?
Every year my mother sister and I make a ton of christmas cookies, bars, breads etc and make plates or tins of them for relatives and friends. (It’s a tradition of ours) I am tasked with making little banana breads (among other things) this year and I would like to use a different recipe than the plain old classic one. I’ll be making little breads in the tiny loaf pans and loaf sheets with six little loaves on a sheet. The only thing I don’t want to put in is those nasty gooey, gummy red and green cherry things (I think they call them candied cherries). I’d also like to not use nuts because they are sooooo expensive around here this year. Thanks and I’m looking forward to hearing your ideas!

BTW – I already have all the bananas so I’m definitely making some sort of banana bread. Thanks!

1/2 cup solid vegetable shortening
1 cup sugar
2 eggs
3/4 cup mashed ripe bananas
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups flour
1/2 cup macadamia nuts
Pinch of cinnamon
Preheat the oven to 350 degrees.

Oil and flour a 9x5x3-inch loaf pan.

Using an electric mixer, cream the shortening and sugar. With the mixer running on medium speed, add the eggs one at a time. Add the bananas and mix well. Add the baking soda, salt, flour, nuts and cinnamon and mix thoroughly. The dough will be sticky.

Pour the dough into the prepared pan and bake about one hour or until the center is brown and set
